HISTORY :
Its production, the fruit of Mexican authenticity and the French savoir-faire of Maison Villevert, perfectly illustrates the "Grand Cru" uniqueness of this tasting tequila. Excellia Tequila Grand Cru sublimates the world of tequila with boldness through an extraordinary taste experience and a human story driven by passionate people : Doña Leticia Hermosillo Ravelero and Jean-Sébastien Robicquet. Doña Leticia Hermosillo Ravelero, a pioneer in the tequila industry, is one of the few women at the head of a 400-hectare agave Estate and a distillery managed by her son, Maestro Tequilero Don Alberto Partida. Very attached to their terroirs, they share common values : respect for their heritage, ancestral know-how and their cultures.
PRODUCTION :
Produced by hand in a single distillery, "Cava de Oro", Excellia Tequila Grand Cru is an additive-free tequila, 100 % agave from the Blue Weber variety, grown to maturity, approximately 8 years old.
Particular care is taken at every stage of production. Agaves are harvested by hand, then cooked in traditional in brick ovens then ground in a wheel mill to gently extract the agave juice. The juice are then subjected to natural fermentation. This is followed by double distillation, carried out according to the rules of the Cognac art. Then comes the magic of ageing takes place in casks that have matured Sauternes and Cognac over 20 years old.
