Tasting notes :

Nose : Complex, with fruity, floral and spicy notes of citrus fruit, orange zest and tangerine, iris and rose, vanilla, custard, brioche and exotic fruit.
Palate : Balanced, intense and rich, with notes of dried apricot, mango and banana cake.
Finish : Very long and exotic.
Grape variety : Ugni blanc.
Chantal Hillairet comes from an old wine-growing family that has been established for at least four or five generations in Éraville, in Grande Champagne. Born on the farm where she still lives today, she grew up in the heart of the vineyards, perpetuating a family heritage deeply rooted in this exceptional terroir.
With her former husband, Chantal developed her vineyards from just a few hectares to an estate of 28 hectares. A visionary committed to respectful viticulture, she was one of the first, alongside Jean-Luc Pasquet, to convert her vineyards to organic farming in the mid-1990s. At a time when few dared to take this step, she showed boldness and conviction, paving the way for sustainable, committed winegrowing.
Although she has never distilled the grapes herself, it is the Pasquet family who have taken care of transforming her precious harvests into eaux-de-vie. This Cognac, from the 1999 harvest, was distilled by Jean-Luc Pasquet, continuing the strong bond between their two families. This collaboration continues to this day, as we continue to distil part of his production.
In addition to her commitment to the vines, Chantal has devoted a great deal of her life to her local community. Starting out as a town clerk in Éraville for some twenty years, she was then elected mayor, serving two terms with passion and dedication. Her work has had a profound impact on the community, with the renovation of the village hall, improvements to infrastructure and local development. Her unwavering commitment has left a lasting mark on Éraville and its residents.
