Nose : Luscious aromas of candied fruits and prune open up on the nose, enriched by hints of cocoa, toffee and a hint of spices.
Palate : A fine aromatic continuity with notes of tobacco, leather and oak, enhanced by the freshness of citrus zest and a subtle hint of walnut.
Style : A richness and complexity that are gradually revealed, with a finesse typical of old Grande Champagne eaux-de-vie.
Ageing : this Ancestral 25.1 cask was placed in the Grand Chai, Delamain's first cellar dating back to the 18th century. It's a lively, vibrant place, facing south, where the marked variations in temperature over the seasons play an essential role in the development of the casks, which rest there in silence for decades.
Situated near a window and facing the staircase leading to the semi-buried cellar, it benefited from a constant draught of air and humidity bathed in light. These conditions influenced evaporation, shaping the intensity and complexity characteristic of its aromas.
After decades in the angels' share, where volume, colour and strength are shaped only by the passage of time, this Rare Cask produces just 190 bottles of Ancestral 25.1.
