GRAPE VARIETY : Mainly Ugni blanc.
VINEYARD & TERROIR : Integrated vineyard management, typical limestone soil of the Petite Champagne cru.
HARVESTING & PRESSING : Maturity control, rapid pressing after harvest. Pneumatic presses (rapid filling to avoid oxidation).
FERMENTATION : Control of fermentation temperatures and storage of wines on lees for better conservation without the addition of SO2.
CRAFT DISTILLATION : With lees, very slowly. Cut during tasting.
Operations monitored by a BNIC representative.
AGEING : A few months in red oak barrels, then many years in old barrels (French Limousin oak) in our own cellars.
REDUCTION : Slow through to a specific process.
FILTRATION : Very gentle to preserve maximum flavour.
BOTTLING : By hand on the estate. Each bottle is counted by the BNIC.
TASTING NOTES :
A Cognac of remarkable finesse and roundness, distinguished by its notes of dried flowers, candied apricots and liquorice. On the palate, the wood is perfectly integrated, offering a pleasant texture and exceptional length. A pleasant rancio subtly completes the finish, creating a harmonious and memorable tasting experience.
